Beets with Goat Cheese Cassava Root Chips
Somehow, snack companies haven’t figured out how to make and/or market kohlrabi chips. (Note: Get on that, lazy-ass snack companies.)
So, in the meantime while you twiddle your thumbs eagerly anticipating a kohlrabi chip drop, maybe give these cassava root chips a try?
Cassava is found all over the world and lots of people eat it, though not always in chip form and most definitely not with beets mixed in and with a goat-cheese-like dust sprinkled over them, which sounds weird, admittedly, but is very good.
